Shocking Truth: Why Wal-Mart’s Ice Cream Doesn’t Melt In The Sun!

ice-cream-sandwiches-4-550Lately, there’s been a video going viral where a guy leaves his Wal-Mart brand ice cream sandwich out in the sun for a few hours and shockingly, it doesn’t melt!

To further drive his point home, he puts it next to another brand’s “real” ice cream, which becomes a pool of milk in no time flat.

Thus he concludes that nasty chemicals and preservatives must be at work.

Pretty scary stuff, right?

Actually, it’s not scary at all. If he’d bothered to read the ingredient list and actually researched what went into the ice-cream, he would’ve known it’s not so bad.

I believe this is just a prime example of people get a little uneasy when they see food not behaving in the way it’s supposed to.

It’s not just ice cream melting, but I’m sure you’ve heard about how McDonald’s burgers didn’t decompose when left out for months? Now while I do agree that McDonald’s ingredients aren’t exactly top shelf quality, it turned out that the real reason was because the burger was just dehydrated. This is the same reason why beef jerky lasts so damn long.

In a similar fashion, the reason Wal-Mart’s ice cream doesn’t melt is because of the inclusion of a key ingredient over traditional scooped ice cream.

It’s called guar gum. This ingredient acts like a thickener, or emulsifier and therefore stabilizes the thawing process. And because people want to eat their ice cream sandwich without it falling apart, it’s not rocket science why they use this ingredient.

But is guar gum harmful?

Not even close. Guar gum is extracted by milling guar beans. What you end up with is a white powder, sort of like sugar. In fact, it’s basically a molecule made of a bunch of different sugars (known as a polysaccharide). Now add some calcium in there to trap the moisture and you have ice cream that is thick and stays together even when the ice crystals inside it melt away.

So let’s recap: They added calcium and a molecule extracted from a bean that’s basically sugar. Sounds like smart food science to me.

To be honest, there is nothing to fear about Wal-Mart’s innocent ice cream sandwich. They’re just using modern day food technology to (safely) keep your hands from getting sticky. That’s about it.
